Banana Pudding

Banana Chocolate Pudding | No Added Sugar

Bananas are a great source of potassium which helps maintain a healthy heart and controls blood pressure. They also contain good levels of protein and dietary fibers. Bananas are widely used in desserts because ripe bananas have natural sugar in them which makes them perfect for desserts. This banana pudding recipe is made with real bananas and no added refined sugar in the recipe. I like the combination of melted chocolate and charred pineapples with this pudding which gives it the perfect tasteSugar Free Dessert

Prep Time: 5-10 mins
Cook Time: 20-25 mins
Rest Time: 30-60 mins
Yield: 2-3 cups

Ingredients:

3 ripe bananas
125 ml of milk
125 mil of Heavy cream (aka whipping cream)
3 egg yolks
3 Tbsp butter
90 gm chocolate (you can use milk or dark chocolate)
Thickly sliced pineapple (as little or as much as you want)
1 Tbsp oil (for brushing)

Optional Toppings: 

Blueberries (optional, but taste really good)
Chocolate granola

Directions:

Brush the sliced pineapples with some oil on each side

Place a pan on high heat and cook the pineapples for 1-2 mins on each side till it has that charred color and texture. Take it off the pan and let it rest

In a blender, add bananas and milk and blend it to form a smooth puree

Place a pan on medium-low heat add the pureed banana mixture, butter, and egg yolks

Cook while keep stirring so that no lumps form in the mixture for about 3-4 mins. (If you do see lumps, take it off the pan and stir vigorously to break the lumps and put it back on the gas)

Take the mixture of gas and add the heavy cream to it and mix it properly. Let it cool in the refrigerator for 30-60 mins

Once cooled, use a hand blender to whip the mixture for 5-6 mins until it is light and fluffy

In a microwave heat, the chocolate with the remaining butter for 1 min till nicely melted and fold it in the pudding. You can add more or less chocolate as per your preference and taste

Let’s assemble:

In small glasses or dessert bowls, layer the banana pudding with a scoop of pudding and some blueberries. Top with some chocolate or plain granola, charred pineapples, and repeat the layer.

Voila, it’s ready to serve!
